The Ancient Method
Discover the artistry of winemaking with a side-by-side tasting of Pinot Noir crafted using two distinct fermentation techniques from the same vineyard. Our Méthode Ancienne (Ancient Method) Pinot Noir is made using 100% whole cluster, gently pressed in the fermentation tank, with the (clean) feet of one of our cellar staff lightly treading on the grapes (The Pigeage – like in I LOVE LUCY) and lovingly hand-crafted by our winemaker to make a more structured, rustic expression with enhanced tannins. These wines are special! Experiencing several of these incredible wines next to traditionally made wine from the same grapes from the same vineyards will allow you to compare the two styles.
